One of the great braising cuts in all of cooking. The shank comes from the lower leg — a tough, sinewy piece of meat that transforms completely with time and low heat. Braise them in white wine with garlic and herbs for an Italian-style preparation, simmer them into a fragrant curry, or go classic with red wine, tomatoes, and root vegetables. The connective tissue melts into a rich, silky sauce while the meat turns fork-tender and falls from the bone. Two shanks per pack — enough for a dinner that feels like a proper event.
We ship our meat frozen every week on Tuesday with dry ice and recyclable shipping materials. You can select your shipping date when completing an order. We offer free local pickups in Helena at our downtown location, The Union, at 361 N Last Chance Gulch, Wednesday - Friday, 11am - 8pm. You can reach them at 406-422-0515.

We also offer local delivery in the immediate Helena area on Thursdays. Free for orders of $199 or more, otherwise a $10 fee applies.
