Otherwise known as coulotte steak, this delicious cut comes from the cap of the sirloin and boasts a decadent fat cap that keeps the meat moist and juicy during the cook. We recommend scoring the fat cap before grilling or searing, slicing and enjoying a piece of that delicious fat with every bite.
Our bundles change regularly, but the categories as specified in the bundle description are always the same. The specific cuts could be a range of:
- Premium steak: ribeye, strip, tenderloin, and flat iron
- Butcher's steak: top sirloin, top sirloin cap, sirloin tip, bavette, skirt, flank, and top round
- Fresh sausage: bratwurst, italian, and breakfast
