The quintessential cut for backyard barbecue purists. St. Louis cut ribs are carved from the belly side of our pasture-raised heritage hogs, meticulously trimmed into a clean, uniform rack that cooks evenly from end to end. By removing the brisket bone and tough cartilage, you are left with a beautifully rectangular slab that features incredible intramuscular fat and a deep, rich pork flavor unique to hogs raised right on Montana pasture.

That pasture-raised fat means serious flavor and a rack of ribs that stays remarkably juicy throughout a long cook. Throw them on the smoker low and slow with a simple dry rub, or bake them in the oven before finishing them over live charcoal. However you choose to prepare them, the payoff is always the same: tender, pull-apart pork with a clean, honest flavor that you simply cannot find in a conventional grocery store. It takes a little patience, but a rack of St. Louis ribs always rewards the effort.

We ship our meat frozen every week on Tuesday with dry ice and recyclable shipping materials. You can select your shipping date when completing an order. We offer free local pickups in Helena at our downtown location, The Union, at 361 N Last Chance Gulch, Wednesday - Friday, 11am - 8pm. You can reach them at 406-422-0515.

We also offer local delivery in the immediate Helena area on Thursdays. Free for orders of $199 or more, otherwise a $10 fee applies.
