An understated favorite of the butcher shop. Cut from the back of the leg where the loin meets the hip, the lamb sirloin steak delivers the perfect intersection of tenderness and deep, robust flavor. Because our lambs spend their days grazing wide open mountain pastures, this meat has a clean, grassy sweetness that completely redefines what good lamb tastes like. It is lean, finely textured, and framed by a beautiful exterior fat cap that melts down to baste the steak as it cooks.

Treat this cut like a high quality beef steak. It thrives on quick, high heat cooking, so sear it in a hot cast iron skillet or over a blazing grill to get a nice crust while keeping the center a juicy medium rare. Let it rest for a few minutes, slice it thin, and finish it with a sprinkle of flaky sea salt. It is an effortless, versatile cut that brings the incredible flavor of the Montana range straight to a weeknight dinner.

Weight: 12oz, 1 per pack.
