The most tender cut on the hog — lean, quick-cooking, and incredibly versatile. Heritage breed tenderloins run smaller than what you'll find at the grocery store, but what they lack in size they more than make up for in flavor.
This isn't the bland, pale pork you're used to. Sear it whole in a hot pan and finish in the oven, grill it over direct heat, or slice it into medallions for a fast weeknight dinner. It takes well to marinades, rubs, and simple seasoning alike. Easy enough for a Tuesday, impressive enough for company.
