Heritage breed pork shows up in a loin chop like nowhere else — ruby red meat with a generous fat cap that you won't find on conventional pork. That fat means flavor, juiciness, and a chop that's forgiving no matter how you cook it.
Grill it, sear it in a hot pan, or bake it low and steady — just don't overcook it. Pull it at a touch of pink in the center and let it rest. A weeknight staple that cooks fast and eats like something you'd order out. Average one-pound packs, exact weight may vary.
