One of the most tender, richly flavored cuts on the animal — once you get past the idea of what it is. Braise or simmer it low and slow until fork-tender, then peel the outer skin and slice or shred the meat underneath.
What you'll find is buttery, melt-in-your-mouth beef that's hard to believe came from where it did. Slice it thin for tacos lengua with salsa verde and cilantro, cube it for a hearty stew, or serve it chilled and sliced for sandwiches. A staple in Mexican, Jewish, Korean, and European kitchens for good reason — this is nose-to-tail eating at its most rewarding. Packs are 1.5–2 lb, exact weights may vary.
We ship our meat frozen every week on Tuesday with dry ice and recyclable shipping materials. You can select your shipping date when completing an order. We offer free local pickups in Helena at our downtown location, The Union, at 361 N Last Chance Gulch, Wednesday - Friday, 11am - 8pm. You can reach them at 406-422-0515.

We also offer local delivery in the immediate Helena area on Thursdays. Free for orders of $199 or more, otherwise a $10 fee applies.
