Cross-cut sections of the tail with meat, fat, bone, and connective tissue all in one package — everything a great braise needs. As oxtail cooks low and slow, the collagen melts into a rich, silky gelatin that thickens the liquid into something closer to a sauce than a broth.
The meat turns impossibly tender and falls away from each vertebra with deep, concentrated beef flavor. Braise it in red wine for a French-style preparation, simmer it into a Jamaican-style soup, or go Korean with a slow-simmered stock. Oxtail is one of those cuts that takes humble ingredients and turns them into something extraordinary. Packs are around 1.75-2 lbs, exact weights may vary.
We ship our meat frozen every week on Tuesday with dry ice and recyclable shipping materials. You can select your shipping date when completing an order. We offer free local pickups in Helena at our downtown location, The Union, at 361 N Last Chance Gulch, Wednesday - Friday, 11am - 8pm. You can reach them at 406-422-0515.

We also offer local delivery in the immediate Helena area on Thursdays. Free for orders of $199 or more, otherwise a $10 fee applies.
