Don't let the name intimidate you — beef heart is pure lean muscle with a clean, rich flavor closer to a steak than anything you'd expect from an organ. It's dense, tender when cooked right, and takes a marinade beautifully.
Slice it into strips and grill hot and fast to medium-rare for the best results — it eats like a bold, beefy cut with a texture all its own. It's also great sliced thin for stir-fry, skewered for anticuchos in the Peruvian tradition, or seared and served alongside chimichurri. One of the most under appreciated cuts in the case, and a nutritional powerhouse to boot.
Packs are around 2 lb, exact weights may vary.
