A hidden gem from the shoulder blade that rivals the tenderloin in tenderness — at a fraction of the price. The teres major is a small, narrow muscle that doesn't get much work, which is why it stays remarkably tender while still delivering the full, beefy flavor that loin cuts can lack.
It's lean, cooks quickly, and does best with high heat: sear it whole in cast iron or grill it hot and slice against the grain. A butcher's favorite that most people walk right past — until they try it once. Packs are around 12 oz, exact weights may vary.
We ship our meat frozen every week on Tuesday with dry ice and recyclable shipping materials. You can select your shipping date when completing an order. We offer free local pickups in Helena at our downtown location, The Union, at 361 N Last Chance Gulch, Wednesday - Friday, 11am - 8pm. You can reach them at 406-422-0515.

We also offer local delivery in the immediate Helena area on Thursdays. Free for orders of $199 or more, otherwise a $10 fee applies.
