Osso bucco is a cross cut section from the beef shank and is Italian for "bone with a hole", referring to the marrow bone that comes with each portion. Traditionally it is made with veal, but the beef version is one of the best, most flavorful cuts on the entire animal when given the proper amount of cooking time. Natural enzymes in the meat also serve as a sauce thickener.
When a bundle specifies a category of beef cut, it can include:
- Premium steak: ribeye, strip, tenderloin, and flat iron
- Butcher's steak: top sirloin, top sirloin cap, sirloin tip, bavette, skirt, flank, top round, chuck eye, denver, oyster, merlot, petite tender, and chuck tender
- Fresh sausage: bratwurst, italian, kielbasa, breakfast, chorizo
- Slow cook cuts: chuck roast, pot roast, stew meat, osso bucco, short ribs, brisket, tri-tip
